Four Cheese Bramley Florentine (Vegetarian)
Ingredients
400g penne pasta
2tbsp olive oil
250g chestnut mushrooms, sliced
2 Bramley apples, peeled, cored and thickly sliced
350g carton fresh four cheese sauce
250g bag baby spinach
freshly ground black pepper
100g stilton cheese, crumbled
Method
- Bring a large pan of water to the boil and cook the pasta following the pack instructions.
- Turn on a grill to high.
- Heat the oil and gently fry the mushrooms and the apple until the apple is just beginning to soften.
- Add the four cheese sauce and the spinach and continue to cook for 1-2 minutes.
- Drain the pasta and stir it into the sauce mixture. Season with black pepper, transfer to a large ovenproof dish and sprinkle the stilton cheese over.
- Grill for 6 –7 minutes until the cheese browns and bubbles.
Serve with a crisp green salad.
