Four Cheese Bramley Florentine (Vegetarian)

Ingredients

400g penne pasta
2tbsp olive oil
250g chestnut mushrooms, sliced
2 Bramley apples, peeled, cored and thickly sliced
350g carton fresh four cheese sauce
250g bag baby spinach
freshly ground black pepper
100g stilton cheese, crumbled

Method

  1. Bring a large pan of water to the boil and cook the pasta following the pack instructions.
  2. Turn on a grill to high.
  3. Heat the oil and gently fry the mushrooms and the apple until the apple is just beginning to soften.
  4. Add the four cheese sauce and the spinach and continue to cook for 1-2 minutes.
  5. Drain the pasta and stir it into the sauce mixture. Season with black pepper, transfer to a large ovenproof dish and sprinkle the stilton cheese over.
  6. Grill for 6 –7 minutes until the cheese browns and bubbles.

Serve with a crisp green salad.
