Caramelized Onion and Bramley Mash

Ingredients


800g potatoes, preferably Desiree or King Edward, peeled and chopped
2 Bramley apples, peeled, cored and sliced
50g butter
1 onion, peeled, halved and sliced into thin strips
1tbsp milk
salt and freshly ground black pepper
2tbsp parsley, freshly chopped

Method

  1. Place the potatoes in a large pan of cold water, cover and bring to the boil for 15 minutes. Pour off half the water and add the apple slices and continue cooking for a further 10 minutes or until the potato and apple are soft.
  2. Meanwhile heat 25g of the butter in a frying pan and fry the onions until golden brown, reduce the heat and cook until soft.
  3. Drain the potato and apple well and add the remaining butter, milk and seasoning and mash until soft and smooth. Stir in the onions and parsley and serve.
Delicious served with sausages, chops or roasted meats.

Serves 4.
