Caramelized Onion and Bramley Mash
Ingredients
800g potatoes, preferably Desiree or King Edward, peeled and chopped
2 Bramley apples, peeled, cored and sliced
50g butter
1 onion, peeled, halved and sliced into thin strips
1tbsp milk
salt and freshly ground black pepper
2tbsp parsley, freshly chopped
Method
- Place the potatoes in a large pan of cold water, cover and bring to the boil for 15 minutes. Pour off half the water and add the apple slices and continue cooking for a further 10 minutes or until the potato and apple are soft.
- Meanwhile heat 25g of the butter in a frying pan and fry the onions until golden brown, reduce the heat and cook until soft.
- Drain the potato and apple well and add the remaining butter, milk and seasoning and mash until soft and smooth. Stir in the onions and parsley and serve.
Serves 4.
