Bramley and Mozzarella Fritters with a Red Onion Marmalade

Ingredients

50g plain flour
2 eggs
1 tbsp milk
250g Mozzarella cheese, grated 100g cheddar cheese, grated
2 Bramley apples, peeled, cored and finely grated
1 tbsp chopped thyme salt and freshly ground black pepper
4 tbsp olive oil


Red Onion Marmalade

50g butter
2 sprigs thyme
1 bay leaf
200g red onions, peeled and finely chopped
1 Bramley apple, peeled, cored and chopped into small pieces
50ml (2 floz) red wine vinegar
1 tbsp dark soft brown sugar

Method

  1. Sift the flour into a bowl and add the eggs. Beat well to make a smooth batter. Whisk in the milk and stir in the cheeses, apple, thyme and seasoning.
  2. Place two tablespoons of flour in a bowl and taking small handfuls of the mixture shape into small flat rounds. Dip in the flour and place on a tray and chill until ready to cook.
  3. Heat the oil and fry the fritters for 40-50 seconds on each side. When cooked place on absorbent kitchen towel and keep warm.
  4. To make the marmalade, melt the butter and add the thyme, bay leaf and onion and fry for 6 –7 minutes until soft. Add the apple, vinegar and sugar and simmer, uncovered for 30 –40 minutes. Allow to cool.
  5. Serve the marmalade at room temperature with the warm fritters on a bed of Roquette salad.

Makes approx. 20 fritters.
