Bramley and Mozzarella Fritters with a Red Onion Marmalade
Ingredients
50g plain flour
2 eggs
1 tbsp milk
250g Mozzarella cheese, grated
100g cheddar cheese, grated
2 Bramley apples, peeled, cored and finely grated
1 tbsp chopped thyme
salt and freshly ground black pepper
4 tbsp olive oil
Red Onion Marmalade
50g butter
2 sprigs thyme
1 bay leaf
200g red onions, peeled and finely chopped
1 Bramley apple, peeled, cored and chopped into small pieces
50ml (2 floz) red wine vinegar
1 tbsp dark soft brown sugar
Method
- Sift the flour into a bowl and add the eggs. Beat well to make a smooth batter. Whisk in the milk and stir in the cheeses, apple, thyme and seasoning.
- Place two tablespoons of flour in a bowl and taking small handfuls of the mixture shape into small flat rounds. Dip in the flour and place on a tray and chill until ready to cook.
- Heat the oil and fry the fritters for 40-50 seconds on each side. When cooked place on absorbent kitchen towel and keep warm.
- To make the marmalade, melt the butter and add the thyme, bay leaf and onion and fry for 6 –7 minutes until soft. Add the apple, vinegar and sugar and simmer, uncovered for 30 –40 minutes. Allow to cool.
- Serve the marmalade at room temperature with the warm fritters on a bed of Roquette salad.
